Instructions to make Samosa chat:
- To make chhola: Heat oil in a pressure cooker, add cumin and fenugreek seeds, let it crackle. Add white peas and saute for 2-3 minutes. Add coriander powder, turmeric powder, salt and 1 cup water, wait for 4-5 whistles on low to medium flame. Switch off the gas and once pressure is released boil for 2 minutes and transfer to a bowl.
- In a serving plate, break or smash 1 medium sized samosa and add the hot chhola from the top.
- Top with some green chutney and whipped curd. Next add some sweet tamarind chutney. You can add the sweet and spicy chutney less or more and as per your requirements.
- Now add some chopped onion. Sprinkle some chaat masala powder, cumin powder, red chilly powder and salt.
- Garnish with some coriander leaves and sev. Prepare remaining servings of the samosa chaat this way.
