Thayir vadai is a very delicious south Indian snack. I love to make this dish very often and even i would always order this when i go for any hotels. Many people think that preparing Dhahi vada in house is not delicious as we eat in hotels. After dipping the vadai in hot water, you can soak it in butter milk to infuse little extra curd to the vadais.

Instructions to make Thair vada:
  1. Soak the urud daal for six hours and grind it to coarse texture without adding water.
  2. Add rice powder and pepper along with salt to the mixture and keep it for 15 min
  3. Take a pan and pour oil for deep frying.make small vadas and fry till golden brown.
  4. Cut the ginger, green chillies and coriander leaves.add this to the curd and mix well along with 2 tsp sugar
  5. Soak the vadas in curd mix for 30 min
  6. Take a small pan and pour some oil.once oil is hot add mustard seeds and chillies along with curry leaves and pour the tadka to the dahi vada mix.
  7. Serve chilled

Many people think that preparing Dhahi vada in house is not delicious as we eat in hotels. After dipping the vadai in hot water, you can soak it in butter milk to infuse little extra curd to the vadais. Never use too sour yogurt to make thayir vadais. Just before serving add some more seasoned yogurt and garnish with carrot,coriander leaves and boondi. Wet your hands and make shape of vada in your hands or in your convenient way of making vada shape and drop in oil carefully.
